Ingredients
Serves 4
  • 4 fillets white fish, such as hake 4块鱼肉(鳕鱼)
  • 4 tsp Thai red curry paste 4勺泰式红咖喱糊
  • 1 avocado, sliced 1只鳄梨 , 切片
  • 1 cucumber, sliced into fingers 1根黄瓜 , 切成手指粗细
  • 1 romaine or 2 Little Gem lettuces, leaves separated 1颗莴苣或者2颗小生菜 , 摘叶
  • small bunch coriander, roughly chopped 一小把香菜 , 切碎
  • zest and juice 1 lime, plus extra to serve 一只柠檬 , 榨汁
  • 1 tsp clear honey 1勺蜂蜜
  • 250 g brown rice, cooked, to serve 250克棕米


Method
  1. Heat oven to 200C/fan 180C/gas 6. Brush each fish fillet with 1 tsp of curry paste, then roast on a baking sheet for 8-10 mins until the fish flakes easily.
  2. 预热烤箱(风扇200度或者上下火180度) , 在每块鱼肉上涂刷一勺咖喱糊 , 放在烤纸上烤8到10分钟 , 待到鱼肉变松变软 。

  1. Meanwhile, mix together the rest of the ingredients, apart from the rice, in a large bowl with some seasoning. Serve with the spiced fish and brown rice, plus extra lime wedges for squeezing over.
